Tartar

Tartar: Creamy mayonnaise, crisp cucumbers and a squeeze of lemon juice give this tartar sauce its slightly sweet, all-natural twist.

Tartar
  • Crab Cakes with Tartar Sauce

    Serves 6

    Ingredients

    • 8 oz  fresh crab, preferably Maine
    • Egg
    • 2 T tartar sauce
    • ½ t lemon Juice
    • 1 T worcestershire
    • 1 t garlic mustard
    • 1 t parsley, chopped, fresh
    • ½ t crab boil seasoning
    • ¼ cup fresh bread crumbs, crusted
    • Flour to dredge
    • 2 T olive oil and butter to cook

    Directions

    1. Mix the crab and bread crumbs until they are homogenous.
    2. Mix the other ingredients, then fold into the crab/bread mix.
    3. Chill this for one hour.
    4. When chilled, form into 6 patties, dredge in the flour and pan fry until golden brown.
  • Frito Misto Platter

    Serves 4

    Ingredients

    • 12 ea shrimp raw, thawed, peeled and deveined
    • 12 ea scallops, side muscle removed
    • 12, 1" X 1" pieces  white fleshed fish,
    • 2 lg spanish onions,
    • 1c flour
    • 4-5 eggs, beaten
    • 1 T chopped parsley
    • 2 C white, dry bread crumbs
    • Frying fat, as needed
    • Frying pan or electric fryer
    • Salt and pepper
    • Baking pans, flat
    • Paper towels
    • Little bowls of Tartar Sauce, one per person

    Directions

    1. Preheat the fat 325.
    2. Peel the onions and keep whole. Separate the outer layers about 3 per person for frying. Reserve the rest for another application.
    3. Make sure the fish is patted dry, then season with a little salt and pepper.
    4. Mix the parsley into the beaten eggs.
    5. Line up the ingredients starting with a tray of  flour, bowl of  eggs, then tray of crumbs and an empty tray for the raw, breaded fish.
    6. Starting with the flour, bread each piece individually to insure an even coat, and reserve on the empty tray(s).
    7. Fry a little until each is golden brown, keeping in a warm oven on another tray.  Serve 2 pieces of each per person when frying is complete.
  • Grilled Cheese and Tomato

    Serves 1

    Ingredients

    • 2 slices white bread
    • ½ fresh tomato sliced
    • 2 slices American cheese
    • 1 Tbsp. tartar sauce
    • 1 t butter
    • Salt and pepper

    Directions

    1. Preheat the skillet to low to medium.
    2. Spread both slices with the tartar sauce.
    3. On one slice, place the cheese and tomato, salt and pepper, cover with the second slice of cheese and then the remaining slice of bread.
    4. Place the butter in the pan until it melts, then place the sandwich in the butter.
    5. Cook until light brown and the cheese is starting to melt; turn and cook the remaining side.
    6. Slice diagonally and place on a sandwich plate.
