Raspberry Chipotle

Raspberry Chipotle: Sweet meets heat in this bold blend of raspberries, apples, roasted red peppers and smoked jalapenos.

Raspberry Chipotle
  • Jicama Salad

    Serves 6

    Ingredients

    • 2 Jicama, peeled and cut like french fries
    • 3 oranges, fresh orange sections
    • 3 T Cilantro, rinsed, rough chopped
    • 4 t Bermuda onion, diced
    • 2 T Jalapeno pepper, seeded, fine dice
    • Sea salt/black pepper, to taste
    • 2 T cider vinegar
    • 3 T + Raspberry Chipotle sauce

    Directions

    1. Place the Jicama in a large bowl.
    2. Peel the oranges on a baking pan with a knife removing the white pith, leaving the flesh exposed.  Discard the orange peels.
    3. Cut between the sections, removing a clean orange wedge. Place these with the Jicama and the juice from the oranges.
    4. Add remaining ingredients and gently fold all together.
    5. Chill for a couple of hours
  • Roasted Peaches

    Serves 6

    Ingredients

    • Ice cream, vanilla, as much as you like
    • 3, (½ per person) peaches, fresh, pitted, halved
    • 1 + T per half Raspberry Sauce
    • Sheet pan, with parchment

    Directions

    1. Preheat the oven to 375.
    2. Wash, split and pit the peaches.
    3. Brush the inside surface and cavity of peaches with Raspberry sauce.
    4. Bake until peaches start to get soft and the raspberry is bubbly, approximately 15 minutes.
    5. Carefully remove to a suitable dish and top with a scoop of vanilla ice cream.
