Country Ketchup

Country Ketchup
  • Chicken Nuggets Caruso

    Serves 4-5

    Ingredients

    • 1 lb trimmed boneless chicken thighs, diced
    • Cooked, fluffy white rice, reserved
    • ¼-1/3 cup Country ketchup
    • 2-3 T sherry, dry
    • 1 T shallots, diced
    • ½ cup shitake mushrooms, sliced
    • Salt and pepper, to taste
    • 3 T heavy Cream
    • Oil/butter as needed to sauté
    • 2 T chopped parsley

    Directions

    1. Trim the fat off the thighs and dice into one-inch pieces.
    2. In a preheated skillet, cook the chicken thighs evenly on all sides, add the shallots and mushrooms and cook covered until tender.
    3. When tender, remove the cover, reduced the liquid until almost dry and add the sherry; cook a few minutes until the alcohol is reduced.
    4. Add the ketchup, mix gently, then season and add the heavy cream.
    5. Bring to a slight boil, and then place on a platter over the rice.
    6. Sprinkle with the parsley.
  • Creamy Dressing Burgers

    Makes 2 Cups, 16 1 ounce servings

    Ingredients

    • 1 C Country Ketchup
    • ½ C mayonnaise
    • ¼ C horseradish Sauce
    • 2 T chopped Cilantro
    • 2 T red pepper relish
    • 1 t  fresh onion, minced

    Ingredients

    1. Combine all the ingredients, and chill for about an hour.
    2. Serve one ounce or as you like for each hamburger.



  • French Fried Sweet Potatoes

    Ingredients

    • 4 large sweet potatoes
    • Country ketchup
    • Canola or peanut oil to fry
    • Paper towels
    • Skimmer
    • Fryer
    Directions
    1. Peel the potatoes and cut lengthwise into slices about ¼ inch thick.
    2. Cut the slices into ¼ inch strips, set aside.
    3. Preheat the oil to about 325 in a fryer or a deep fry pan.
    4. Very carefully, place enough fries into the hot fat and fry to a golden brown.
    5. When cooked, blot them with the paper towels and keep warm until the rest are cooked.
    6. Sprinkle the fries with a little cinnamon, and then serve with a side dish of Country Ketchup.

    Notes: The amount of sweet potatoes depends on the number of guests. One large potato should feed two people generously.  You may also slice the potatoes ¼ inch thick into Saratoga type chips for frying.

  • Sloppy Joes

    Ingredients

    • 1 lb lean ground beef
    • 1 1/2 cups diced yellow onion
    • ½ cup ketchup
    • ½ cup beef broth
    • 1 t brown sugar
    • 1 T vinegar, cider
    • 1 tsp garlic minced
    • 1 T worcestershire sauce
    • Hamburger rolls (or rolls of your choice)

    Directions

    1. In a skillet, brown the ground beef about ¾ drain most of the fat and add the onion.  Cook until onion is soft and tender.
    2. Add the balance of ingredients and simmer until the liquid is reduced and the meat mixture is slightly thick.
    3. Split and toast the rolls, then ladle about 3 ounces of meat on the bottom half. Cover with the top half and serve.
