Blueberry

Blueberry
  • Blueberry Clafouti

    Use a 9" inch deep pie pan, or 9X9 rectangle, buttered

    Ingredients

    • 1 cup whole milk
    • ¼ cup heavy cream
    • 3 eggs
    • ¼ cup sugar
    • 1 t vanilla
    • ½ t almond extract
    • ¼ t salt
    • 2/3 cup flour AP
    • 3 cups blueberries, fresh
    • ¾ t lemon zest
    • S & F Blueberry Topping

    Directions

    1. Preheat oven to 350 and butter the dish/pan for baking.
    2. Mix all the liquid ingredients and zest; add the sugar, flour and salt and stir until blended.
    3. Pour ½ the batter into the dish, arrange the blueberries in the dish, then pour the rest of the batter over all.
    4. Bake 35-45 minutes until a tester comes out clean.
    5. Cool, and portion, then top with blueberry topping and whipped cream.
  • Blueberry Lemon Parfait

    Serves 6

    Ingredients

    • 6 Parfait Glasses
    • Wild Blueberry topping, as needed
    • 1 pint lemon sherbet
    • 6 fresh lemon Verbena leaves
    • 6 oz Champagne or Sauterne
    • Small ice cream scoop

    Directions

    1. Line up the parfait glasses and pour one ounce of wine into the bottom of each glass.
    2. Very carefully but quickly, put one scoop of sherbet into each parfait glass. (Dipping the scoop in hot water will help create nice scoops.)
    3. Without hitting the inside of the glass, place one tablespoon of topping over the scoop of sherbet.
    4. Repeat this process until there are multiple levels of sherbet and the glass is full, ending with a layer of sherbet.
    5. Place in the freezer until ready to use, and then serve with a large verbena leave.
  • Gingerbread with Wild Berry

    Ingredients

    For the gingerbread:

    • 1 cup molasses
    • 1 cup sour cream
    • ½ cup brown sugar
    • 2 eggs
    • 2 ¼ cups flour AP
    • 1/2 t salt
    • 1 t ground ginger
    • ¼ t nutmeg
    • ¼ t clove ground
    • 2 t baking soda
    • 1 cup blueberries, stemmed, cleaned
    • ¼ cup dried cranberries
    • Whipped cream
    • Wild Blueberry Topping

    Directions

    1. Preheat oven to 350 and grease a 9 X 13 X 3 pan.
    2. Combine the sour cream and the molasses.
    3. Stir in the sugar and eggs, then mix well.
    4. Sift the dry ingredients, and then mix with the molasses mixture until smooth.
    5. Fold in the berries; pour batter into the prepared pan.
    6. Bake for about 35 minutes or until a skewer comes out clean.
    7. Put on the topping or, for a special treat, make a blueberry whipped cream by whipping the cream with a little vanilla and then folding in the topping.
