Sweet Pepper Relish

Sweet Pepper Relish: Naturally sweet red peppers, cane sugar and vinegar make this relish a sweet, tangy delight.

Sweet Pepper Relish
  • Harlequin Salad

    Serves 8

    Ingredients

    • 1 ea Jicama, peeled and sliced into strips
    • 2 ea apples, Granny Smith, sliced into thin wedges
    • 1 t lime juice
    • 3 T red pepper relish
    • 2 T cilantro
    • 3 T red onion, diced, small
    • Salt, ground black pepper, to taste
    • 2 ea oranges, peeled sliced
    • 1 c cooked, chilled rice

    Directions

    1. Slice the top and bottom off the orange just into the flesh.
    2. With a paring knife, peel the oranges leaving just the flesh, then section the orange segments between the pith.  Save juice for the salad.
    3. Peel and core the apples, and wedge them thinly to match the oranges.  Toss them in the lime juice.
    4. In a large stainless bowl, gently fold in all the ingredients and chill until serving.
