    Serves 4, generously

    Ingredients

    • 1 Flank, steak
    • Sweet bourbon sauce, as needed
    • Marinade:
      • 6 T olive oil
      • 2 T cider vinegar

      • Salt/pepper, to taste

    3. Chill 6-8 hours, turning over at least 3 times. You may leave this overnight.
    4. Remove the flank from the marinade, and wipe free of the marinade to prevent flare-ups on the grill.
    5. Wire brush the grill and lightly oil the grids.
    6. Place the flank on the grids and turn the fire to medium.
    7. Cook 4-5 minutes per side, turning and basting each side at least twice during the cooking period. You may want to slice the thin end off and continue cooking the thick end if you prefer it more well done.
    8. Serve this with extra sauce for dipping.
